I’ve been giving the Silver Birch Sauvignon Blanc the ol’ Pepsi Challenge: can a box of wine be fresh for up to six weeks after opening?
As of September 19th, my box has been open for 3 weeks. In other words, it’s headin’ over the hill. But how’s it holding up?
Still tasty. But, it’s definitely past its prime. I’m getting some oxidized flavors, the bright grapefruit is fading into ripe stonefruit flavors. The acidity is good, but not nearly as intense. It’s still a decent glass of vino.
The first to second week saw virtually no change in the wine. So I’m interested to see how fast the decline is from here. There isn’t a whole lot of Sauvignon Blanc left in the box, probably a few glasses, so I imagine maturation will speed up. We’ll see.
Wine is alive, and it’s always changing. How long have you kept a bottle/box of wine open and still enjoyed it?
